A $5.8 billion category compounding at 5%
The largest bagel chain in the country describes this moment as an inflection point for the whole category, and it is backing that with more than 300 new bakeries by 2030. Grand View Research puts the U.S. bagel market at $5.8 billion, expanding roughly 5% annually. When the category leader publicly commits to 40% unit growth, it validates demand for everyone building in the space - and it leaves an enormous amount of territory uncovered.
Ugly Bagel enters that growth with something the incumbents do not have: a hand-rolled, fresh product, a full espresso program, and a brand people actually want to wear.

Breakfast traffic turned positive again
Circana's Eating Patterns in America report - built on $1.7 trillion of spending across more than 618 billion eating and drinking occasions - found morning-meal traffic rose in the first quarter of 2025, the daypart's first increase since 2023. The driver is return-to-office: average office occupancy climbed to 52% from 49%, and commuters want portable, fast, high-quality food on the way in.

Coffee is the most consumed beverage in America
Nearly 195 million American adults drink coffee every week, and 66% had coffee in the past day - more than tap or bottled water. Specialty coffee has taken the lead over traditional coffee on a past-day basis for three straight years, and it skews young: 69% of 25- to 39-year-olds had a specialty coffee in the past week.
Crucially for a bagel shop, 86% of past-day coffee drinkers have it first thing in the morning, and specialty drinkers are the most likely to buy their coffee out of home. Espresso and lattes are driving the growth. That is a beverage attach on top of every food ticket, in exactly the hour a bagel shop is already busy.

Franchising enters 2026 positioned for growth
The IFA and FRANdata project more than 12,000 new franchised businesses in 2026, franchise output above $920 billion, and franchise employment climbing to nearly 8.9 million jobs. The Southeast already accounts for nearly 30% of all U.S. franchised businesses and the Southwest is growing fastest at 2.5% - the same Sun Belt corridors where Ugly Bagel is awarding territory.

Category tailwinds only matter if a single shop can capture them. Ugly Bagel stacks breakfast, lunch, a full coffee program, and catering into 1,037–1,600 square feet - a fraction of a full-service restaurant's real estate, running the same four-wall team through the whole day.
Our company-owned Nashville Arcade shop produced $887,426 in gross revenue in calendar 2025 with 22.3% food cost and a 50.8% gross margin. Gross margin is not net profit - it excludes rent, royalties, marketing, insurance, and debt service - and one shop is not a system average. A bagel and a coffee is a small check that repeats three mornings a week. Loyalty and app ordering compound it.
Beverage carries the margin
Espresso, drip, and refreshers protect profit on every ticket in the daypart where coffee demand is at a record high.
Catering fills idle capacity
Office trays, school runs, and team breakfasts use production capacity the shop already built.
